2 head of cauliflower
2tbsp butter
extra virgin olive oil
salt and pepper to taste
Remove the stem and leaves from the cauliflower and break into florets. Wash and drain.
In small batches add to a food processor and pulse until the cauliflower looks like rice. Remove to a bowl. Continue until all the cauliflower has been "riced".
In a large skillet, heat 2-3 tbsps of olive oil and add the butter. Place all the "rice" in the skillet and stir to coat with the oil and butter. Cook for 5-10 minutes. Season with salt and pepper to taste.
Serve.
