2 acorn squash, halved and seeded
3 -4 tbsp extra virgin olive oil
4 tsp fresh thyme
½ tsp kosher salt, or to taste
¼ tsp freshly ground black pepper, or to taste
¼ -1/2 cup freshly grated parmesan cheese
Preheat the oven to 400°
Slice the squash into ¾" slices and place in a large bowl. Drizzle with the olive oil and toss to coat evenly. Add the thyme, salt and pepper and toss.
Place on a jelly roll pan or foil cookie sheet. Sprinkle with the parmesan cheese and roast for 25-30 minutes.,
