Salmon Cucumber Appetizer Makes about 48


1 7.75oz can of salmon, drained

1 3oz package cream cheese, softened

1 tbsp fresh lemon juice

¼ tsp salt

¼ tsp dried dill

2 seedless cucumbers

1 jar of julienne pimentos


In a medium bowl combine the salmon, cream cheese, lemon juice, salt, dill and pepper.


Slice the cucumber into ¼” slices. Spread 1 tsp of the salmon mixture onto each cucumber slice and garnish with a piece of pimento. Place on a serving platter, cover and chill until ready to serve.
