2 10oz packages of frozen chopped spinach
2 cups herb stuffing, firmly crushed
1 cup Parmesan cheese
½ cup melted butter
2 medium onions, finely chopped
3 eggs
dash of nutmeg
Preheat the oven to 350°
Cook the spinach according to the package directions and drain well.
Combine the spinach and all the other ingredients. Shape into 1” balls.
You may freeze the spinach balls at this point for later use.
Bake for 10-15 minutes and serve with a hot mustard sauce.
